There are endless ideas for this compound butter… slather it on a crusty baguette, or on mashed potatoes, hash browns, fried rice, steamed spinach, grilled onions, sautéed shrimp, grits, pan-fried tilapia, burgers, grilled cheese sandwiches, cheese steaks, pork chops, pasta, roasted tomatoes …

Chimichurri Butter Recipe by Ingrid Hoffmann

Chimchurri ButterIngredients
2 tablespoons sherry vinegar
1 tablespoon fresh lemon juice
3/4 cup chopped flat leaf parsley
3 tablespoons chopped fresh oregano leaves
2 garlic cloves, roughly chopped
Pinch red pepper flakes (optional)
2 sticks (1 cup) unsalted butter, room temp
Salt

Directions
Place the vinegar, lemon juice, parsley, oregano, garlic and red pepper flakes in a food processor and pulse until finely chopped. Transfer the mixture to a piece of cheesecloth or a kitchen towel and wring out the excess liquid. Place the mixture in a small bowl and stir in the butter.

Transfer the chimichurri butter to a sheet of plastic wrap and shape it into a log. Wrap in plastic wrap and refrigerate until it has hardened.

Note: I just placed in plastic container then scooped out with small ice cream scoop.

Seoul Town Tapas!

Over the weekend, Peter and I finally got to taste “Seoul Town Tapas” by Chef Debbie Lee. Her limited-engagement, pop-up restaurant at Breadbar started in late February, but our “dining out” calendar was simply over-booked.

Well, we should have cleared our schedule and eaten there earlier, because an evening of Chef Lee’s modern “Korean Pub Grub” turned out to be a super fun (and of course tasty) experience. Chef Lee is so friendly, that after just a few minutes we felt like she was an old friend. Now I’m really looking forward to learning more about her family’s Northern Korean food.

BreadBar's DebbieLee PosterIt’s BYOB, so Peter and I brought a couple of airline-size vodkas and mixed them with fresh pomegranate juice, provided by BreadBar. The next time I go, I think I’ll have a drink or two before going to dinner, because many of the dishes were perfect post-partying eats. Back in my 20’s (back in the 80’s) when I partied EVERY night, this would have been the “go to” place for after-clubbing “who’d ya hook up with” debriefing sessions with my girlfriends.

“Seoul Town Tapas” ends May 1st, and I already have another table booked with a group of foodie pals before then. I only hook up with one guy these days, but I’d gladly hang out (eat, drink or party) with Chef Debbie Lee any night of the week.

Animal Gets Cookin’

When I heard that my favorite L.A. chefs (Animal Restaurant’s Vinny Dotolo and Jon Shook) were offering a cooking class, I immediately signed up and invited two friends, Jade and Afaf. I love the chefs new cookbook “Two Dudes, One Pan” which recently was voted one of the “Top 10 Cookbooks of 2008” by National Public Radio. The chapters in the book are divided up by pans: “The Big Bowl” (for salads & dressings), “Nonstick Skillet”, “Frying Pan”, “Dutch Oven”, “Roasting Pan” and “Baking Dish”. I’ve already tried some of the delicious recipes and am continuing to post them here.

The cooking class was held at “Let’s Get Cookin'” in Westlake Village. It was my first visit to this little gem and I loved the small culinary store up front. The shop is stocked with gourmet ingredients, artisanal pastas, cookware and tons of groovy gadgets!

The classroom area was located in the back of the space. It consisted of a long counter which worked as the “stage” area for guest chefs. We students were seated in chairs with tables that face the cooking stage. To the left of the students, there were in-house chefs assisting Vinny & Jon throughout their presentation.

It was all very organized and the evening flew by quickly. We watched as the chefs prepared five recipes from their book, and yes indeed…. we got to eat everything! Delicious and good fun!

It’s not all about bacon at ANIMAL Restaurant. Before the first of my many, many visits, I read a review that noted there was “too much” bacon on the menu. Of course that made me want to go ASAP, but in reality the restaurant is more about being adventurous… as chefs and as an eater.

Two of my favorite dishes were actually bacon-free. The Raw Amberjack and the Foie Gras with Strawberry & Grits (pics below). But there were plenty of pork accented plates that made me think I had died and gone to bacon heaven. Especially the Bacon Chocolate Crunch Bar dessert!

That very first dinner at ANIMAL (Aug 29th) was so good, that my husband Peter and I ate there again the next evening. The servers (Jeff on Friday night… Victor & Arlene on Saturday) were convivial and very helpful.

Chef Jon Shook stopped by our table a few times to chat and to recommend dishes. Chef Vinny Dotolo never left the busy kitchen but I blame that on our table… we just could not stop indulging ourselves and had to taste everything we could.

Simply put, the food at ANIMAL is fearless, delicious and full of passion. See you there soon!
