Ferran Adria – One of the GREATS

Chef Ferran Adria was in town recently. Los Angeles was his only west coast stop to promote his new book “A Day at elBulli”

A Day at elBulli? I wish!

For those of you who aren’t familiar with the chef, a seat at his restaurant elBulli is one of most sought after reservations in the world. They receive over 2 million reservation requests each year, and there are only 8,000 available per season. More Info

On the morning of the book signing, I woke up at 4 am and couldn’t go back to sleep. I would be meeting FERRAN ADRIA! He was scheduled to be at the Cook’s Library at 3:30 for a book signing, but I was there by 1:30, nervously telling the staff “I’m a little early for Ferran”. Earlier that morning I called to find out how the event would be organized and was told “first come, first serve”.

The Cook’s Library is a true gem. It’s a small culinary bookstore, just up the street from the Beverly Center. This was my first visit and I fell in love with it instantly. The walls are filled with every cookbook I already own (hundreds) and every single one I have on my Amazon wishlist. Right then, I promised myself to only purchase my cookbooks there. So “bye buy” to my lazy Amazon.com shopping!

Since I was there so early, I sat on the small couch and piled up a stack of books and settled in. I noticed someone across the way doing the same, and I soon learned that she had been waiting for Ferran since 11:30am. Two hours before me! Good. I didn’t seem so freakish after all.

My husband Peter arrived around 2:30 just when it started getting busy. He never takes time off from work, but I insisted he come meet me by saying “it’s like the Pope is in town and we have an audience with him! You CAN’T miss this”! Of course I was also thinking “You have to be there so I can get a picture with Ferran Adria!”. And Honestly, it wouldn’t have been so special if we hadn’t shared it together. The sheer excitement of meeting the man, that many call “the BEST chef in the world”.

To have a book signed by Ferran, it had to be purchased at The Cook’s Library. We bought five copies… each book weighing in at seven pounds! Earlier the staff handed out post-it notes with numbers to help organize the line. Peter and I were number two. I proudly stuck the sticky on his lapel and we continued watching the scene together, as more and more people tried to squeeze into the small store. The line eventually went out the back door into the street.

It was fun to see that the staff was also thrilled to be meeting the famous chef. One of the clerks told us that Ferran Adria’s people had CONTACTED THEM. Ferran himself had picked the Cook’s Library for this book signing, an awesome honor indeed.

At 3:30 all eyes were on the front door. I spotted her first…. Isabel aka Mrs. Ferran Adria. I recognized her from a recent episode of “Made in Spain”, the show hosted by Ferran’s protégé Jose Andres. Mrs. Adria had a small video camera and was proudly filming her husband walking in the book shop. We all cheered and watched Ferran get settled in behind a desk, next to a mountain of books.

When I heard his translator speak, I instantly knew her voice. Lucy Garcia is also Anthony Bourdain’s Spanish translator. I think television is funny because we feel like we actually know the people. It was Lucy who was with Anthony Bourdain on his first visit to elBulli in 2006, “Decoding Ferran Adria” (Season 2, Episode 13). I have it on DVD and it always amazes me. In Bourdain’s recent 2008 Spain episode, Lucy was there again. This time Bourdain was in the elBulli kitchen with Ferran’s equally talented brother, Albert.

By 3:35 Peter and I were standing in front of the great chef with our five copies to be signed. He laughed when he saw our stack of books and thanked us. HE THANKED US. So gracious. He was happy to take photos and made ME feel special by his simple kindness.

That evening, still on my “Ferran Adria High”… I kept thinking about why it felt so special to meet him. He’s not my all time favorite chef… that top honor goes to Mario Batali (the best TV cooking instructor!)…. He doesn’t make my heart pitter patter like Anthony Bourdain or Eric Ripert. And meeting him wasn’t really like “meeting the Pope” (as I said to my husband) because we’re not even catholic!

To sum it up…
Meeting Ferran Adria is like a movie buff meeting Steven Spielberg…

9/21/08 Dinner at Animal with my nephew Cody and his girlfriend Jade… and friends Bob, Andrew & Clara. It was such a treat to have Cody there. He is by far my favorite eating partner! We especially loved the Pork Belly and the massive “109” Steak. Chefs Vin and Jon both came around to chat with our group. Love those guys!

Fords Filling Station

Birthday dinners are always extra special. Since we’re going out to celebrate, we tend to get a little more dressed up, and more importantly… we usually order extra food and drinks!  

I asked Jade (my nephew Cody’s girlfriend) where we could take her for a birthday dinner and her only choice was Ford’s Filling Station. Cody has EMT (Emergency Medical Technician) training on wednesday nights (the day of her birthday) so unfortunately he couldn’t join us for dinner.

Our family loves Jade so much that we now introduce her as our “niece”. She looks nothing like me (Japanese/Scottish), so we joke that she’s from my husband Peter’s side of the family (he’s Danish/English).

Jade is from a small town in Tennessee, and has the cutest accent to prove it. I love going out to dinner with her because she LOVES food (almost as much as I do). She’s a tiny thing which makes me want to smack her once in a while (kidding!).

Food is always a major topic when we get together with Jade and Cody, and I know that’s one of the happy bonds that keep them together.

“One Chick, One Pan”

(9/26/08) I made “Jon’s Sausage, Broccolini and Pasta Frittata” over the weekend. It was the easiest recipe yet, and also the most filling! We had it for breakfast on Saturday and Sunday. I topped with shaved Manchego cheese and served with fresh mango (topped with red pepper flakes). Recipe on page 58.

The chicken skin was SO CRISPY, and the fennel salad was a whole new flavor mix! Totally refreshing.

I have never had tastier cauliflower, especially with the crispy bits on top. My husband Peter couldn’t figure out the mystery ingredient in the Salsa Verde. He thought I had made chimchurri (which I make all the time) but he was surprised to find a deeper, richer flavor in the sauce, that he couldn’t quite describe. I told him “It’s the Umami… the fifth taste”. The mystery flavor was anchovies. He still couldn’t taste them after I told him, and then he asked for more…

The first two recipes I tried were “Peaches & Arugula Salad” on page 29, and “Chicken in White Wine and Herbs” on page 114. One pan (skillet) for the chicken, and one bowl for the salad.

Easy prep, easy pan sauce and easy cleanup. I loved the tart flavor that the vinegar added to the wine sauce. And my friend Laur enjoyed the salad so much that she almost licked out the bowl!

It’s not all about bacon at ANIMAL Restaurant. Before the first of my many, many visits, I read a review that noted there was “too much” bacon on the menu. Of course that made me want to go ASAP, but in reality the restaurant is more about being adventurous… as chefs and as an eater.

Two of my favorite dishes were actually bacon-free. The Raw Amberjack and the Foie Gras with Strawberry & Grits (pics below). But there were plenty of pork accented plates that made me think I had died and gone to bacon heaven. Especially the Bacon Chocolate Crunch Bar dessert!

That very first dinner at ANIMAL (Aug 29th) was so good, that my husband Peter and I ate there again the next evening. The servers (Jeff on Friday night… Victor & Arlene on Saturday) were convivial and very helpful.

Chef Jon Shook stopped by our table a few times to chat and to recommend dishes. Chef Vinny Dotolo never left the busy kitchen but I blame that on our table… we just could not stop indulging ourselves and had to taste everything we could.

Simply put, the food at ANIMAL is fearless, delicious and full of passion. See you there soon!

BLT

BLT – Bistro Laurent Tourondel

Dinner at BLT with good friends Marty and Kathy. I had read about the “amazing” popovers, but thought “seriously… how good can they be”. UM.. pretty damn good! They were crispy on top, pulled apart easily, steamy and airy inside and came with a small recipe card.

It turned out that Marty was a regular at BLT, so the sommelier spent extra time with us making sure we (especially Marty) were well cared for throughout the evening. Before dinner, Peter and I had a drink in the bar and nibbled on the nondescript looking popcorn on the counter. It was fantastic…. tart, salty and spicy.

My two favorite dishes were the appetizer of Artisanal Slab Bacon (of course) and the Onion Rings. The steak was fantastic, perfectly fine… but I’ve had plenty of fantastic steak in Los Angeles (my favorite steak is at Mastro’s served up with lobster mashed potatoes). But still, I did enjoy the steak here and totally recommend the slab bacon, onion rings, and the addictive popcorn at the bar!

Foundry on Melrose

The L.A. Times Restaurant Guide describes The Foundry as a “modern bistro”. The food seemed pretty classic, so I wasn’t sure what they meant by that. It’s a little loud inside with cool, crazy jazz playing throughout the space. A great place to meet up with friends and enjoy cocktails and dinner… in the patio area if you want to talk! We ate there with Diane & Ron back in May. Chef Eric Greenspan had recently won the “Grilled Cheese Invitational”. His Short Rib and Tallegio Grilled Cheese w/Apricot Caper Puree won first place in the “Kama Sutra Sammich” category (any kind of bread, any kind of butter, and any kind of cheese, plus additional ingredients). The large tacky trophy was on display above the bar. It was totally out of place and felt just right! My favorite was the Grilled Cheese and of course, the Pork Belly.

Comme Ça Restaurant

I love the cheese program at Comme Ça! Walk in and look to the right. They have an amazing cheese station. My husband, Peter, and I love to go for drinks and just gorge ourselves on stinky cheeses. Époisse, Livarot, Tete de Moine and Cabrales are favorites.

The first night we ate a full dinner at Comme Ça was on 12/19/07. The brasserie was still pretty new and Chef David Myers was on hand to watch over everything. I like his energy. His relaxed surfer vibe instantly makes you feel at home. Oh and he’s super cute too.

We ordered “El Diablo” Cocktails (tequila, ginger, lime, soda), Roasted Beef Marrow with Oxtail Jam, Glazed Sweetbreads, Steak Frites & the Cheese plate for dessert. Everything was wonderful but our favorite was definitely the Marrow. After a couple of cocktails, it felt like we were in Paris and I loved the noisy, bustling atmosphere.

Dining at Comme Ça with a larger group (of nine) was even more fun. Our friend Andrew’s family was visiting from Comme Ça 2/19/08North Dakota to celebrate his 21st, and they wanted to try something “L.A. and Fun”.

Peter and I ordered the Beef Marrow and Oxtail Jam of course. It is just so CREAMY and salty. My mouth is watering right now. We pretty much shared everything else that was ordered: Duck Confit, Beef Bourguignon, Veal Shank, Steak Frites, and for dessert an amazing Brioche Pudding and a Cheese Plate.
